7-Minute Microwave Bread and Butter Pickles
Ingredients:
1 cucumber, cut in ¼-inch slices
1 medium onion, sliced
1 cup sugar
½ cup white vinegar
1 tsp salt
1 tsp pickling spice
1 tsp mustard seed
Directions:
Place all ingredients into a large microwave-safe bowl. Microwave on high for
7 to 8 minutes, stirring twice. Remove from
microwave, and place in clean jars. Let
cool. These pickles stay crunchy and tasty
for a long time if kept in the refrigerator.
